Tostatura Media Dolce®

One foot in the past, one foot in the present. Selection, roasting and blending in service of a single hand-pulled ristretto, drawn short and sweet in the old-world manner — respecting all of the hands it passes through on its way to the demitasse cup.

The Process

A Childhood Ritual

Raised above his grandmother’s bakery.

Andrea grew up above a European bakery in Chicago, where espresso was the after-school ritual rather than a specialty purchase. He carried it into a downtown cart, then the caffè, and has kept the same standard for twenty years.

He apprenticed with Kevin Knox and Paul Songer of Allegro Coffee in Colorado. Standing room only at the al banco, with red caffè tables in the lobby of the historic Selling Building.
